1. Set a budget

Sometimes “budget” gets treated like a dirty word, but it’s really just you telling YOUR money what to do. 

I think you should do this all the time 🙂 But, set a clear budget for black Friday spending. Set a hard dollar amount limit for how much you have to spend. You can spend it all, or you don’t have to if you can’t get the deals you were looking for. 

And above all else. DON’T OVERSPEND or GO INTO DEBT. The quote below is my absolute favorite from Dave Ramsey. “Don’t buy things you can’t afford with money you don’t have to impress people you don’t like”…I always add in or do like. Because remember, spending money and presents don’t equal love. 

2. Make a list

Make a list. Especially if you are going out to the actual store. Trust me, this black Friday tip will make your life so much simpler. 

I like to break my list down by store. Then list the item, the sale price and the time the sale is on. And I try to number the list in order of importance. 

I prioritize by store and then item within the store to try and make sure I am getting the best and most important deals first. Personally I like to actually write out a list and keep it with the sales ads and not just make a list in my phone.  

3. Maximize your savings

Get the most out of black Friday and maximize your savings by using EVERY avenue to save money possible. 

Use a credit card that offers a reward (points, cash back or whatever). You can even open a store card the day of for an extra reward. Just remember rule #1-don’t overspend and stick to your budget. 

If you’re shopping online, use Ebates. They give you cash back on almost any online purchase you make. And it’s free to sign up. Get the app or download a browser extension if you’re using a computer. Why not get a cash back on something you’re already planning on buying anyway?

Check the Thanksgiving day paper for coupons! And not just grocery coupons, any in store coupons for more black Friday savings. 

4. Get Social

Getting social can help in a few different ways. Here are some ideas:

-Shop with friends. Split up to cover more ground=getting more deals. Or stick with a group and have a friend purchase an extra item for you that normally has a limit of 1. I love to do this when it comes to Amazon Prime deals, I ask my sister to order an extra for me. 
-Follow Keto on a Dime and other Facebook deal groups. The groups will let you know when sales are starting and might point out things you didn’t already know were on sale. 
-Share deals with your friends on any social media platform. I know I hate missing a deal, so I love to see what people find

5. Stay home

Black Friday has really morphed from being a brick and mortar only shopping holiday to an online palooza. Almost all stores that offer deals in store, are also offering those deals online. Sometimes the deals start at different times, or are slightly more expensive. But think of the gas money, time and frustration you can save by staying home and shopping all on line. Plus when it comes to Keto deals, the best companies will offer sales on their sites, so that’s even more of an incentive to stay home!

6. Do your homework

Research, Research Research before you buy. 

Check the store sales, sales times and dates and the item specifics. You want to make sure you are fully prepared and dare getting what you want. Nothing is worse than missing a sale or getting less than what you wanted because you didn’t read the fine print. 

7. Start early

8. Stock up

In my experience Keto companies have ROCK BOTTOM sales prices at this time of year. It’s your chance to grab months worth of your favorite products or treats at their lowest prices. Of course you want to stick to your spending limits, but see this as an opportunity to buy A LOT of stuff now and save the rest of the year.

What do the best Keto snack bars taste like?

I keep saying they taste amazing…but what do I mean?

This year, I starting thinking about putting together Keto Thanksgiving recipes to share with all of you that would give you a complete Thanksgiving menu that is totally Keto. 

I’ve included a few of my own personal recipes and collaborated with several other bloggers to offer you some unique ideas.

Keto Thanksgiving Recipes-Appetizers

1. Cheese Board. A cheese board or a cheese tray is a super easy Keto appetizer for any holiday. And you can completely customize it! You can check out the “recipe” here. But feel free to add your favorite cheeses, whatever is on sale or something special you know your guests will enjoy!

2. Relish Tray. This was always a staple at Thanksgiving when I grew up. A try stuffed with different varieties of pickles and olives. Turkey is my favorite holiday meal. In fact, I usually buy an extra turkey or two each year at Thanksgiving when they are on sale and make them over the next few months. What can I say? I love turkey. I used to brine my turkeys with sugar, salt and spices. But since I’ve gone Keto, I needed a recipe without a sugary brine, that is why I developed Keto Roasted Turkey. It’s just as good if not better than my usual brined turkey and is a completely Keto friendly recipe. 

Keto  Roasted Turkey will work as a perfect recipe for Thanksgiving, Christmas or any holiday. Or if you’re doing Keto on a Budget like me, this will work when you cook your extra turkey in the middle of January!

Fresh vs. Dried Herbs

Keto  Roasted Turkey calls for dried herbs mixed together with loads and loads of butter. This will make for a flavorful skin and meat underneath. The massive amounts of butter will help keep things juicy and tender. 

I used dried herbs in this recipe, but you can feel free to substitute fresh herbs if you have them on hand. You would need to triple the amount listed in the recipe. So if I say 2 tsp of a dried herb, you would use 2 TABLESPOONS of a fresh herb. 

I suggest using sage, thyme and rosemary but you are welcome to add in your favorite spices. Make sure you check any prepackaged spices for sugar or maltodextrin-avoid those as they can spike your blood sugar. 

What do I need to make Keto Roasted Turkey?

The most important kitchen equipment you will need is a roasting rack and a roasting pan.

My suggestion is to buy them as a set. The first time I was hosting Thanksgiving, I roasted a very large turkey, and I had bought mine rack and pan separately. My roasting rack didn’t fit into my pan and I didn’t discover it until Thanksgiving day when I went to cook the turkey. I ended up setting the turkey straight into the roasting pan and the bottom ended up soggy with no color-don’t do that 🙂

I ended up buying a great rack and pan from my local thrift store to use for the next year’s turkey. It was a great deal! I suggest checking there or ordering one from Amazon. (see picture below)

When mixing the herbs with the softened butter, my suggestions is that you use your food processor. It makes this step take like 20 seconds. If you don’t have a food processor, you might consider getting one. They make a lot of food prep super simple. My thrift store suggestion applies here too. If not, check out this one.

Ingredients

  • 12-15 pound Turkey
  • 2 sticks softened butter can use as little as 8TBSP if you need to
  • 2 tsp dried sage
  • 2 tsp dried thyme
  • 1 tsp dried rosemary
  • 3 tsp minced garlic
  • salt and pepper to taste
  • 2 lemons-quartered
  • 1 large onion peeled and quartered
  • fresh herbs to stuff inside turkey (optional)
  • 2 cups turkey broth

Instructions

  1. Preheat the oven to 450 degrees F

  2. Place turkey in roasting rack tuck the wings under the body and pat dry. Leave the turkey sitting out for 20 minutes while you complete the next steps. You want this to come to room temperature

  3. Mix butter, garlic, sage, rosemary, thyme, parsley and salt and pepper to taste together in a bowl. if you want a speedy option, mix together in a food processor-super simple

  4. Stuff the onion, lemon and fresh herbs (optional) inside the turkey cavity. 

  5. Rub the butter mixture under the skin of the turkey breast and all over the outside of the turkey skin. You can add additional salt and pepper here as well. 

  6. Place 1 cup of the chicken broth in the bottom of the roasting pan (reserve remaining if needed for additional basting). Place the roasting rack into the roasting pan

  7. Bake at 450 F for the first 45 minutes. Baste with the turkey broth and drippings from the bottom of the roasting pan. 

  8. Reduce heat to 350 F for approximately 3 more hours. Cooking time will vary based on the size of your turkey. Insert a thermometer into the thickest part of the turkey thigh and make sure it has reached 165 degrees F

  9. Baste the turkey with the broth and drippings from the bottom of the pan every 30 minutes. You can add in the reserved cup of turkey broth if needed. 

  10. Remove turkey from oven, tent with foil and rest for 20-30 minutes. 

  11. Slice and Serve!

This delicious Keto side dish is full of caramelized flavor punctuated by tasty bits of bacon and crispy goodness. Pair this dish with pork chops or roasted chicken for a wonderful, low-carb meal.

Ingredients

  • 4 slices thick cut bacon
  • 1 1/2 pounds brussels sprouts trimmed and cut in half
  • 2 tablespoons olive oil
  • sea salt and black pepper to taste

Instructions

  1. Pre-heat oven to 400°F.

  2. Cook bacon in a large cast iron skillet over medium-high heat, turning once to ensure it is cooked evenly on both sides. Cover pan with a splatter guard while cooking, if desired. 

  3. Remove skillet from heat and place cooked bacon on a wire rack set over paper towels to drain. Once cool, blot bacon with paper towels to remove excess fat before crumbling

  4. After skillet has cooled slightly, carefully drain the excess bacon fat into an empty can or other heat-safe container. If any fat drips down the side of the skillet, be sure to wipe it off with a damp dish cloth before putting it back on the burner. 

  5. In a large bowl, combine Brussels sprouts and olive oil and toss to coat. Season with salt and freshly ground black pepper, to taste.

  6. Heat cast iron skillet over medium-high heat and add Brussels sprouts and cook for several minutes until they begin to turn brown. Add the crumbled bacon to the skillet and place in the pre-heated oven

  7. Roast for 20-25 minutes, stirring halfway through, until the sproutsturn a rich, caramelized color. 

  8. Remove skillet from oven and serve immediately.

My main concern when I’m thinking about how to store ground beef (or any ground meat really), is making sure it lasts.

The basis for doing the Keto diet on a budget is to buy when food prices are the lowest, store the food properly and then make AMAZING Keto recipes with it.

I want to store ground beef in my fridge or freezer and keep it fresh as long as possible because I want to have enough on hand, that I can wait for the next ground beef sale .

How to pick out ground beef

First thing to consider is price! Pick out and store ground beef that is CHEAP. I normally buy 80% lean or 73% lean ground beef. These are fatty cuts of ground beef that are perfect for the Keto diet.

I know the regular price in my area for a family pack of ground beef is $2.49 a pound-this is my buy price. Meaning, if I need ground beef, I will buy it at $2.49/pound. I also know that anything below $2.49/pound is a stock up price. Which means, when the price is low, I buy it, use it, store it and freeze it, so I always have the cheapest ground beef possible. (in case you’re wondering, the lowest I’ve ever seen ground beef on sale for is $1.59/pound).

Second thing to consider isquality:

  1. check for additives. get 100% beef. I know it seems crazy to say, but I’ve seen “natural flavoring” added to ground beef-you don’t need that and it’s not worth a lower price for a lower quality
  2. look for meat that is a bright cherry red color on the outside with fat marbled throughout. if you’re seeing gray or brown beef on the surface of the package, it may be starting to spoil
  3. make sure the package is sealed. if the package is open or torn, skip it

How to store ground beef in the fridge

When you’re storing ground beef in the refrigerator, you to keep it covered and sealed tight. Remember to keep refrigerator set to 40° F or cooler

Raw in the fridge:
-keeps up to 3 days (see what the USDA says here)
-keep in original store packaging-sealed
-store ground beef in a freezer or food storage bag or wrapped in foil 

Cooked ground beef in the fridge:
-refrigerate within 2 hours of cooking ground beef
-keeps 3-4 days (see what the USDA says here)
-store ground beef in covered air-tight containers, heavy duty food storage bags or wrapped in foil 

How to store ground beef in the freezer

When storing ground beef in the freezer, it will keep indefinitely if it is kept frozen at a consistent temperature of 0° F or colder. BUT, the longer you store ground beef, it loses quality. Follow these storage guidelines for the BEST quality. 

-for best quality, use within 4 months (see what the USDA says here)
-mark your packages with a date before freezing
-store ground beef in a freezer or food storage bag or wrapped in foil 
-see my storage method below

How to package ground beef for freezing

I’m about to introduce you to my secret weapon when it comes to how I store ground beef….FREEZER PAPER!

Freezer paper works wonders when freezing any meat. It prevents freezer burn, helps keep ground beef fresher longer, makes storage in the freezer easier and more compact. 

Anytime I am freezing ground beef (or any meat), I wrap a portion in freezer paper, store multiple portions in a freezer bag and stack in the freezer. When it comes time to defrost, I remove one freezer wrapped portion at a time and defrost in the fridge.

Here are the steps:

  1. Take a portion (I use 1 pound or 1 1/4 pound) and place on freezer paper. Fold up 3-4 inches from the bottom.

Budget tip: Freezer paper and freezer bags should be bought in bulk or family packs. These generally have the lowest price point. And the few extra cents it will cost you to store ground beef properly is well worth the money. Check out this deal on bulk freezer paper here

How to defrost ground beef

The best and safest way to defrost ground beef is in the refrigerator. 

I take one or two portions of ground beef and place in a shallow bowl or tray (to catch any drips) in the fridge. I generally package my ground beef in one pound packages. These normally defrost within 1-2 days in the fridge. 

If you need a faster defrost time, you can rapidly defrost ground beef in the microwave or cold water. Make sure to cook immediately if you use a rapid defrost method because the ground beef can begin to cook during this process. So for safety reasons, cook right away.

And it’s easy to make-it comes together super quickly. You don’t need tons of fancy ingredients. I bring this up because the first time I ever saw a recipe similar to this was on Instagram and it was called Crackslaw. I just couldn’t wrap my head around the name or really the concept of how that could taste good at all. I wasn’t Keto at the time, so I think I just didn’t understand how delicious fried up ground meat with cabbage and veggies could be. But then I tried it. And it was GOOD. Then I made it again and it was REALLY good. Then I made it for my sister and she loved it. And then I had to try and put it into a recipe to share with all of you.

Every time I make this at home, it’s different. I use whatever spices I’m in the mood for and whatever meat was one sale or was handy in my freezer. So, if you’re looking at this ingredients and something doesn’t look good to you, swap it out! 

Don’t like spicy sausage? Try regular or “sweet” sausage.

Not a fan of ginger? Leave it out. Or, leave it out and sub in more garlic!

Forget to buy sesame seeds? Skip it.

Ran out of rice vinegar? Substitute apple cider vinegar or plain white.

Was ground beef on sale this week? Use it. You could try all beef. Or half spicy sausage and half beef.

I think you get the idea. Use what you have, what you like and what is on sale.

Ingredients

  • 1 1/4 pound spicy ground pork (or beef)
  • 1/4 cup water
  • 3 cups shredded green cabbage
  • 1 medium shredded carrot
  • option, can substitute a bag of coleslaw mix for the cabbage/carrot
  • 2 TBSP toasted sesame oil
  • 1/2 TBSP minced ginger
  • 2 TBSP chopped green onion
  • 1 TBSP rice vinegar
  • 2 TBSP coconut aminos (or soy sauce)
  • 1 TBSP toasted sesame seeds (optional)
  • salt and pepper to taste

Instructions

  1. Heat a large high-sided skillet over medium-high heat. Add sausage and cook, breaking the meat into small pieces as it cooks, for approximately 5-6 minutes. Once sausage is no longer pink, remove from heat and carefully drain excess grease from pan.

    Safety Tip: Wipe off any excess fat that drips down the side of the pan before returning to burner.

  2. Return skillet to heat. Add water and scrape up brown bits from the bottom of the pan with a spatula. Reduce heat to medium and add shredded cabbage, carrots, sesame oil, ginger, and green onions. Season with salt and black pepper, to taste, and cook, stirring frequently, until the cabbage wilts and the carrot softens, approximately 4-5 minutes. 

  3. Add rice vinegar and coconut aminos and stir to combine.Cook another 1-2 minutes or until heated through. Remove from heat and transfer to a serving platter or bowl. Sprinkle with toasted sesame seeds, if using,and serve immediately. Enjoy!

Keto Deals and Recipe Ideas at Aldi (week of 9/18)

This week at Aldi, look for great prices on spaghetti squash (hello fall!), cheeses, olives, pork ribs and more! 

There aren’t many deals this week on meat, so definitely time to dip into the freezer or check out other stores for better sales! 

The real trick to saving money on Keto is to use what’s on sale over and over throughout the week in different meals and storing your sale items in the freezer and pantry for weeks like this.

I’ve put together some links to great recipes that use what is on sale this week. 

There isn’t much on sale for desserts or fat bombs, so I’ve linked some prepackaged treats that you might consider trying out. If not, you can always rely on Aldi’s regular priced items that are good deals-like frozen fruits, cream cheese, or heavy whipping cream to throw together for a quick dessert!

Keto on a Budget | 15 Money Savings Tips

Ok, so you’ve taken the plunge. You’ve started (or getting ready to start) the Keto diet! You’re feeling great, looking great, preforming great. BUT now you’re wondering-can I afford this? And how? The Ketogenic Diet produces great results, but grocery shopping for your new way of eating can seem expensive-especially when you’re first starting out. So today, I’m giving you my top 15 money saving tips for doing Keto on a budget!

1. Know your prices

Know your prices.

This is my #1 tip for doing Keto on a Budget. 

If you don’t know what things cost, you can’t spot a sale, a good price or a stock up worthy deal. 

The thing is, stores and manufacturers want you to buy THEIR product. They position things on shelves, in the sales ads and on the product so you will buy it. They aren’t concerned if you know what a good deal is, they want your money. 

For example, I know where I live, the regular lowest price for ground beef at my local store is $2.49/pound. So, when I see ground beef priced below $2.49/pound, that’s a good deal and I should buy some!

If you are serious about savings and aren’t sure what the regular/best price is on food you buy all the time, figure it out. You can track this in a notebook, on your phone, in an excel spreadsheet-whatever works for you. But over the course of a few months, jot down the prices of things you buy all the time and what the price is and note the lowest price and store you find these at!

Another important component of knowing your prices is looking at the unit price. You might be able to get a 16oz jar of pickles for $2.00 and a 24oz jar of pickles for $2.50. The 16oz jar would be $0.13/oz and the 24oz jar would be $0.08/oz. So, the jar that is $2.50 is actually cheaper, because you’re getting more pickles (24oz) for less ($.08/oz), even though the entire jar costs more. 

So, know your prices!

Know the regular price of food you buy often, so you can spot a sale

Pay attention to the unit price, so you know what you are getting is a good deal. 

2. Shop your weekly sales ad

Shop your sales ad! And stock up when things are cheap.

Most stores put out a weekly or bi-weekly sales ad. CHECK IT before you shop!

Where I live, sales run Sunday-Saturday, so one of my favorite things on Sunday mornings is to check the sales ads. Yes I know that makes me lame, but I love it. I like to see what’s on sale, think about what I should stock up on and what I can make with all of it. 

Find out when your stores release their sales flyer. Check it out before you shop. And if you’ve already followed my advice in step 1, you’ll know what’s a good price in the sales ad and you can add it to your shopping list. 

Buying what is on sale will help you save money and stick to your Keto budget.

3. Take inventory of what you already have

Take an inventory.

Before you buy anything new, take an inventory of what you already have. And then use it. Or at least don’t buy a duplicate.

I know most of us have that jar of pickles way back on the shelf that we can’t see. Or that extra package of pork chops in the fridge. Or that pint of cream hiding behind the electrolyte drink on the top shelf in teh fridge. If you do a thorough check before you make a list or shop, you’ll make sure you’re not buying things you don’t need. And you’ll make sure you don’t let things spoil or go past their expiration date. Again, saving money and doing Keto on a budget! (I know you’re seeing a theme here).

If you hate to take an inventory before you shop, you can always keep a running list in a notebook, on your phone, an excel spreadsheet or wherever of your inventory. Try to keep your inventory nearby so you actually use it. Think one sheet on the side of the fridge and one in the pantry (or in your phone-you never put that down anyway). Then, each time you use something, cross it off the list. Each time you add something, add it to your list. 

4. Shop with a list

Keto shopping listMaybe it’s just me, but if I don’t shop with a list, I ALWAYS forget something. Even if I only need a few things. Then, I have to spend extra time and money taking a trip back to the store. Learn from me, just make a list!

Make a shopping list at home after you’ve planned your meals, and taken an inventory of what you have. Then, only buy what is on the list. This will make sure you stick to your budget, don’t over spend and don’t buy things you don’t need. 

5. Have a meal plan

Have a meal plan and even meal prep ahead of time!

If you know ahead of time what you are going to eat, you will save money. You’ll only buy what you’re going to eat, you won’t waste food and likely you’ll eat less-all because it’s planned!

6. Calculate your macros

I may have opened a can of worms with this one. You might be thinking what are macros and how do I calculate them?

Macros (or macronutrients) are just the energy giving components of food. They are carbohydrates, protein, and fat. This is where calories come from. 

Whether you want to gain weight, lose weight or just stay right where you are at, calculating your macros will ensure that you aren’t over eating. If you aren’t overeating, you aren’t overspending.

Have a plan, calculate your macros, stick to it-it will save you money!

7. Use a COUPON

Use a COUPON. When you can. 

I used to be an extreme couponer. I got tons of crazy deals on all sorts of stuff and lots of pre-packaged foods. Once I started Keto and doing my best to live a healthier lifestyle, those coupon deals were much less attractive because I wasn’t eating that kind of stuff anymore. And for awhile I abandoned coupons all together. But I found that there are still coupons for Keto friendly foods (think pickles, dressings, condiments, nuts, nut flours, oils, even berries and more) and I try to use them anytime I can. 

By using coupons anytime I can, I can stock up when prices are low and put that savings towards more expensive items or Keto treats. If I save $5 this week on my groceries by using a few coupons, I can save that for a week when I want to buy a fancy steak. Or put my savings towards a pre-made Keto treat that isn’t normally in my budget (top on my list are Quest tortilla chips, Smart Cakes, Good Dee’s mixes, Lily’s Chocolate!). Or just put the extra money you save away for a rainy day. 

Where can I find Keto coupons?
  • Check your local paper each week for coupons. Flip through and clip anything that might be Keto friendly
  • Check websites for major brands-they quite often have a coupon you can print. 
  • Look for tear pads near products at your grocery store
  • Print them from coupon websites like redplum.com, pgeveryday.com, smartsource.com, retailmenot.com

Anytime you see a coupon for a Keto product or produce or a brand that has Keto friendly products….Clip it or print it. Then save it until that item goes on sale. Then you can stack your coupon with a sale price for maximum savings! 

8. Stick to the basics

Stick to the BASICS!

There are a lot of Keto products, treats, supplements out there. I see new ones pop up everyday. And most of them are AMAZING. 

But don’t fall into the marketing trap. You don’t need any of those. If you can afford them and you enjoy them, perfect-buy them.

If you’re trying to save money or just have a limited grocery budget, skip them. 

Instagram is a big offender for me. I see my favorite Keto friends trying amazing products and treats and it really tempts me to try new things. I have definitely gone over my budget trying stuff I’ve been tempted with online before. 

Stay strong. Stick to the basic-meat, cheese, fats, low carb veggies.

A good rule of thumb if your budget is tight is if you can’t buy it at the grocery store, you don’t need it. One exception to this rule might be sweeteners if your grocery store doesn’t carry them, you may need to buy one online. I’ve found the cheapest erythritol is the Anthony’s brand found on Amazon (check it out here). If you prefer stevia, I have found generally Now brand from Amazon is a good price (see it here).

9. Don't waste: know how to store and how long it keeps

This may seem obvious, but food waste is also money waste. And it happens to the best of us. 

One thing I hate to see is picking up an awesome head of cauliflower, popping it in the fridge, going to use it and bam, it’s not good. Or worse, grabbing a great price on ground beef, freezing it but forgetting to label it or leaving it to long and it gets freezer burn. It’s like throwing money out- LITERALLY! 

So make sure you:
-know what you have in your fridge/freezer (this goes back to having an inventory!)
-you know how to store it
-know how long stuff keeps (and label it!)

10. Get an extra freezer

Get an extra freezer!

Having an extra freezer will allow you to stock up when prices are really good. 

A couple of years ago, my local PriceRite store had corned beef on sale after St. Patrick’s day for $0.49 a pound….that is crazy cheap. I can’t even buy chicken at that price let alone beef. I bought a whole bunch and thankfully, I had an extra freezer on hand to handle it. And double thanks my partner loves corned beef and happily ate it for lunch for many more months than I care to say here. 

But my point being, having an extra freezer can help you save money by having the space to store things you can grab when they’re on sale. Meats, vegetables, low carb ice cream (I also used my extra freezer to store many pints of Enlightened ice cream that I was able to get for $1.50 each). 

Biggest tip: buy a used freezer. If you spend more on a freezer than you save on groceries having it, it does you no good. My last freezer I purchased used on Craigslist for $50 and it has paid for itself over and over. 

11. Make it yourself

Can’t afford it? Make it yourself!

This may seem like another simple thing, but in the world of Keto, there are a lot of pre made, pre packaged ingredients that are expensive that you can make yourself-easily. 

One great example of this is Rao’s tomato sauce-it’s delicious and low carb and favorite to many. But it’s expensive! You can easily make your own homemade tomato sauce much cheaper. With either fresh or canned tomatoes. 

Another example are Keto treats like Lily’s chocolate bars or Quest cookies. These are pricey and you can make them at home. Need a great Keto chocolate bar recipe, check out this one.

Also consider COFFEE. This one can be a small daily expense on the way to work that really adds up over time. If you aren’t already making your coffee at home to save money, I challenge you to start. Check out my favorite bulletproof coffee recipes here for inspiration!

11. Stack rewards when shopping

I could go on and on about how different reward programs can help you save money, but I’ll try and keep it simple.

Every time you shop-online or in the store, you want to take advantage of as money savings and reward programs as possible to maximize your savings and stick to Keto on a budget! This is especially helpful since Keto food and products can be more expensive and sales and coupons are more rare. 

First thing to consider is using a credit card for all purchases that offers cash back (or points if you will actually use them). This is basically like getting paid to shop. You’re already making these purchases, so why not get rewarded. Be cautious and make sure you are not overspending and that you’re still sticking to your budget even if you’re paying with a reward credit card. So layer 1 of savings, is using a cash back or rewards credit card. 

Then on top of that, try using these programs too!

Cash back reward programs for shopping online: 
  1. Ebates. This is far and away the easiest (and best) cash back reward program. Sign up for free. Then each time you go to make a purchase online, Ebates will give you a percentage of the purchase price back (in check or via paypal) for participating stores. If you’re shopping on your phone, you can go right through the Ebates app-easy! If you’re shopping on a laptop/desktop, they have a browser extension Sign up here
  2. Ibotta. You’re going to see this in 2 categories because it’s great. Ibotta helps you save in store and online. Similar to Ebates-it’s free. You sign up and go through their app and they give you a percentage of your purchase back that you can redeem for cash! Easy.
  3. Check out our discounts page here. We have tons of discounts on different Keto products-check before you buy to save more $! 
Reward programs and Apps for shopping in store: 
  1. Ibotta. I told you that you’d see this one again. Ibotta works best for in store purchases. They offer cash back on things you purchase in store (think meat, veggies, ice cream, condiments, a whole variety of name brand items). You select the offers you might be interested in and if you purchase the item, you upload the receipt into the app and they give you money for the purchase. Best part is, you can majorly stack discounts with Ibotta because they are giving you money for buying the item-they don’t care if it’s on sale, if you use a coupon or pay with a cashback credit card, they still give you the cash back. ALWAYS check Ibotta to see if they have an offer for what you are buying-this is a major money saver!
  2. Target Cartwheel. The Cartwheel allows you to save a percentage on a product you purchase at Target. They have great offers that change all of the time-some even up to 50% off. Plus, you can use the Cartwheel with a regular coupon, a target coupon, the sale price and your Target Red Card (see #3)…so this is a crazy amount of stacked savings. Download the Target app and check for cartwheel offers before you shop or even use their handy scan feature and scan the item to check for a discount before you even put it in your cart!
  3. Target Red Card. Oh man the Target Red card is amazing! Anytime you make a purchase online or in store, you save 5%. You also get free shipping when you buy online. But my favorite part about the Red Card is that it comes in a credit card or a debit card. So, if you feel like you have too many credit cards, don’t have good enough credit or simply don’t want to deal with another bill to pay, you can sign up for the Red Card debit card. Target links it to your checking account and when you use it to make a purchase at Target, they just take the funds straight from your bank account. Easy…and oh did I mention FREE and you save 5% every time you shop and this is on top of all other savings?!?! Get yours here
  4. Whole Foods App. If you’re an Amazon Prime member, you get discounts at Whole Foods. Download the app, sign in with your Amazon user name and password and show the app at checkout to save! Deals change weekly, so check your store or app. Plus 10% off all yellow tag items (this is the stuff that’s already on sale!). Aren’t a Prime member yet, try for FREE for 30 days (here). And you can take advantage of Ibotta savings even if you use this discount too. 
  5. Store loyalty programs. Most stores have a card or rewards program that gives you points or extra discounts that can be used with coupons and Ibotta. Check your local store to see what they offer!

14. Know your store policies

Know your store policies. 

If you know the policies of the stores you shop at most often, you can save more money and stick to doing Keto on a budget! 

It’s helpful to know when your store marks down meat. Then you can shop close to the time of the markdowns to maximize your savings! Try asking the manager in the meat department or a friendly employee working in that area-they should know and most are happy to share with you. 

You also should know your store policies about using coupons. Do they accept coupons (I know for sure Aldi does not)? Do they have any restrictions or limitations on using coupons? Do they offer store coupons? Do you need a loyalty or reward card to get discounted prices?

If you don’t know what your store offers and allows, you can’t take advantage of the savings!  

12. Check the clearance aisle every time you shop

Check for clearance items EVERY TIME you shop!

You never know what is on sale of what you might have a coupon for or what kind of treasures you’ll find…so check.

Some stores have dedicated clearance aisles. Sometimes on the end cap. Sometimes right in the regular aisle. Look around, know where clearance items are and have a quick look every time you shop.

This easy Keto roast chicken recipe is a true home run.

It’s the perfect choice for a nice Sunday dinner with friends and family. Plus, you can use the leftovers to make a delicious homemade broth or shred the remaining meat to use in a quick soup or salad recipe the next day.

Easy and Cheap!

Whole chickens are almost always a super low price at the grocery store which makes this easy Keto roast chicken a great recipe to add to your rotation if you’re doing Keto on a budget. 

I know I can generally get a whole roasting chicken for $0.99/pound and quite often on sale for $0.79/pound.

Next time you see whole chickens on sale, buy a couple. Make this Keto roast chicken recipe right away and tuck the rest in the freezer to use with this recipe later.

A couple of notes...

 The onion in this recipe serves two purposes: It raises the chicken out of the juices while it cooks and it imparts a lovely flavor to the pan sauce. After cooking, the onion is discarded, rather than eaten, to keep the overall carb count low. If you would like to omit the onion completely, you can replace the onion slices with ovenproof metal cookie cutters to lift the chicken while it cooks.

Keto Whole Roasted Chicken

Ingredients

  • 1 large white onion cut into thick slices
  • 1 whole chicken (5-6 pounds)
  • 1 container poultry herbs (thyme, rosemary, & sage)
  • 1/4 cup unsalted butter at room temp
  • 6 cloves garlic minced
  • 1 cup chicken broth
  • salt and pepper to taste

Instructions

  1. Preheat oven to 425°F and arrange onion slices in bottom of a large, heavy-duty 12” skillet with high sides.

  2. Remove and discard neck and giblets from chicken and place bird breast-side up on top of onion slices in skillet. Pat chicken dry with paper towels and generously season the outside with salt and black pepper. 

  3.  Separate out approximately 1/3 of the fresh thyme, rosemary, and sage from the bundle. Remove and discard the tough stems from the thyme and rosemary leaves. Combine the leaves with the sage before roughly chopping. 

  4. Add the softened butter, half the minced garlic, and the chopped fresh poultry herbs in a small bowl and stir to combine. Divide the herb butter into small chunks before tucking evenly under the chicken skin covering the breast meat. 

  5. Massage the remaining minced garlic inside the cavity of the bird before stuffing with the remaining fresh poultry herbs. Secure legs together with kitchen string, and then add the chicken broth to the skillet.

  6. Place skillet in pre-heated oven and roast for 1 hour and 30 minutes or until a meat thermometer inserted into the thickest part of the thigh reads 165°F. Check every 30 minutes while cooking to make sure the skin isn’t becoming too brown. If it is, cover with aluminum foil after 1 hour and check for doneness after another 15-20 minutes. 

  7. Remove skillet from oven and carefully transfer chicken to a serving platter. Cover loosely with aluminum foil to keep warm and let rest for 15-20 minutes. 

  8. While the chicken rests, discard the onion slices in the skillet and heat the remaining liquid over medium-high heat. Scrape the bottom of the skillet with a spatula or wooden spoon to remove the browned bits. Continue cooking until the liquid is reduced by one half. Once reduced, taste and season with salt and black pepper, if desired.  

  9. To serve, carve the chicken and top each serving with a spoonful of the warm pan sauce. Enjoy!

The idea for this recipe hit me when I saw that Good Dee’s came out with a new mix….corn bread! And I though, Keto friendly corn bread stuffing-perfect. 

The mix is super easy to make and tastes great on it’s own, even if you aren’t making Keto corn bread stuffing. To be honest, I had trouble not eating multiple pieces while I was trying to make this-don’t say I didn’t warn you, you will be tempted.

Making Keto Corn Bread Stuffing

This recipe works best if the corn bread is made ahead of time. Several days ahead. After you make the corn bread, you cube it and want to basically let it go “stale”. This allows the corn bread pieces to be dry enough to soak up all the liquid and flavor you are adding to the stuffing. 

I recommended toasting the corn bread pieces before making the Keto stuffing. So if you absolutely can’t make the corn bread 2-4 days ahead of time, that’s ok, just toast the pieces longer than the recipe calls for and dry them out.

Ingredients

Ingredients for the corn bread

  • 1 package Good Dee's Corn Bread Baking Mix
  • 3 Eggs
  • 1/4 cup Unsalted Buffter
  • 1 TBSP Apple Cider Vinegar

Ingredients for the Keto Cornbread Stuffing

  • 1 Pan of Prepared Good Dee's Corn Bread Baking Mix works best prepared several days in advance
  • 12 oz Sausage (in the roll-no casing)
  • 2 cups Chopped Celery
  • 100 grams Onion Chopped
  • 1 tsp Garlic Powder
  • 1/4 tsp Sage
  • 1/4 tsp Thyme
  • 1/2 tsp Rosemary
  • 1 1/2 cups Stock or Broth chicken or turkey
  • 3/4 cup melted butter

Instructions

Preparing the cornbread'

  1. Prepare the Good Dee's Corn Bread mix per the instructions on the bag. This recipe works best if it is prepared several days in advance, so that the cornbread has a chance to dry out and better soak up the added ingredients

  2. Cut the prepared corn bread into cubes. 1 inch square work great, but you can cut them to your liking

Preparing the Keto Cornbread Stuffing

  1. Pre-heat oven to 475

  2. Toast cubed cornbread for about 3-5 minutes. Watch these closely, they can burn quickly  Remove from oven and set aside

  3. Reduce oven to 325

  4. Chop onions and celery

  5. Brown sausage until mostly cooked. 

  6. Add onions, celery and spices and sautee for about 5 minutes or until the onions and celery have softened. 

  7. Mix cornbread , broth, melted butter and sausage mixture in a large bowl

  8. Pour mixture into a casserole dish, cover with foil and bake covered for 30 minutes

  9. Turn oven up to 350, remove foil cover and continue baking for another 15-20 minutes. All liquid should be absorbed and mixture should be slightly brown on top.

It’s all about BERRIES this week at Aldi! Strawberries, Raspberries and Blueberries are all on sale. Plus cheese sticks and some meat products, but not much else. 

If you’ve been stocking up and freezing what is on sale, you will want to skip the shopping this week and dip into your stores or shop at other grocery stores with better sales prices this week. And remember, when not much is on sale, you have a few options. 

#1. Rely on what is in your freezer or what is left over from last week.
#2. Shop at a different grocery store or farmer’s market that has produce or Keto fruits on sale. I love doing a one stop shop at Aldi, but when that’s not possible, make a few extra stops
#3. Buy from the selection of Aldi’s regular priced stuff. Aldi’s produce and frozen veggies have pretty reasonable prices. So if nothing is on sale and you can’t do option 1 or 2, pick up a few regular priced items just to get you through the week. Think salads, broccoli, frozen veggies. The price will be fairly low and you’ll survive a few weeks this way-especially since you are a frugal shopper!

How: Just water is great, but get creative too! I usually add mine to coffee with heavy cream and blend it up to get it super frothy.

When to use exogenous ketones

How to Start the Keto Diet: 4 Easy Steps

One really common question I hear ALL the time is “how do I get started with the Keto diet?”

I hear people say, I’ve done the research, I know what Keto is, but how do I start? And you know what? I find myself giving the exact same advice every time.

So, I’m here to give you the easy and over simplified 4 steps on how to start the Keto diet!

Pre-step: Do your research!

I know I said I was going to show you how to start the Keto diet in 4 easy steps, but then it occurred to me that this “pre-step” might be necessary. 

I’m assuming you’re here, because you have a basic idea of what the Keto diet is (low carb, high fat, moderate protein). If that’s you, go right to step 1.

If, that’s not you, STOP RIGHT HERE. Keep reading this pre-step and complete it before you move on!

Most people on the Keto diet avoid grains, sugars, starchy vegetables and more. And some people start the Keto diet and use an “if it fits your macros” approach and will eat anything if it fits their calorie or carb goals. 

The basics of Keto are simple, but there is a lot to learn, so you want to make sure you do your research! Read a book, get on Pinterest, visit great Keto blogs and check out the Keto community on Instagram

My absolute favorite and the book that helped me  start the Keto diet was Keto Clarity by Jimmy Moore. It breaks the Keto diet down scientifically, but in simple yet easy to read terminology. I can’t say enough good things about this book, you should go and read it now.

Step #1: Make a Plan

The first thing you want to do when you are going to start the Keto diet, is make a plan

Decide if you’re going to do “lazy keto” and only count your net carbs. 

Or are you going to go full steam ahead and count all of your Keto macros. If so, calculate your macros here

You should also consider downloading an app to track your carbs, calories or macros. 

The best tracking apps seem to be Senza, Carb manager, or MyFitnessPal.  

You might also consider prepping meals ahead of time or just having a few recipes available for quick meals. If you want to see some Keto meal prep, you can check it out here or here

The biggest thing for step 1 is have an idea of your goals and where you want to head. The rest will work itself out! 

Start the Keto Diet Step #2

Get rid of all non-Keto food in the house!

Or as much as you can. You want to remove the temptation from your life. And trust me you WILL be tempted. 

If you are the only Keto diet-er in your house, try to get rid of as much junk as you possibly can. 

Worst case scenario, if you can’t throw it out, hide it! Separate Keto and non-Keto foods in the fridge, freezer and pantry. Put the most nutritious (Keto) food where it is easy to see and grab.

This way Keto food will be front and center. If you can hide your temptation, you’ll be less likely to eat it. And more likely to grab a healthier Keto option. 

If you must have non Keto food in the house (thanks resistant husbands, kids, boyfriends, roommates and family), make sure you have snacks and food you enjoy, so you don’t cave under pressure. More on that in step 3!

Step #3: Shop for Keto food

Shop for Keto food that you like and will enjoy eating. 

This one is pretty simple. Replace what you got rid of in step 2 with yummy, delicious and nutritious Keto food. 

And buy food you like. Don’t like avocado? Don’t buy it!

You like beef, buy not chicken thighs, go with beef. 

Can’t stand cauliflower? Try broccoli or cabbage. 

Don’t let all the trendy or recommended Keto foods make you buy and eat food you hate. 

Eating what you enjoy will make Keto a lifestyle that you can be successful on long term!

Start the Keto Diet Step #4

Eat Keto food when you're hungry

Eat Keto food when you’re hungry. 

If all of these steps seem super simple, they are. That’s the point. Switching over to the Keto diet shouldn’t stress you out or be heard. It should be a lifestyle shift that is exciting. 

So now that you have a plan, got rid of (or hid) non Keto food, and shopped for Keto groceries, it’s time to eat!

My suggestion is just eat Keto food that fits your macros or carb count when you’re hungry. Don’t stress too much at first about calories or overeating-you can trouble shoot that later. Right now, focus on listening to your body and eating when you’re hungry

A lot of people in the Keto community do intermittent fasting (you only eat within certain hours of the day and fast the rest of the time). This can be a really helpful tool, but I would not suggest starting this right away. Wait until your body is fat adapted (about 3 months in to Keto). 

Remember-you are detoxing from carbs, sugar and lots of junk. Your body will be really hungry some days and not so much on others. Just roll with it. Eat when you’re hungry!

This Keto food list is not all inclusive. I just want to give you some ideas to help you get started. Remember, none of these foods are required, if you don’t like something, skip it. 

You can also start off slow building your Keto fridge, freezer and pantry. When you’re new it’s hard to resist trying EVERYTHING at once. So go slow, try a few things a week and don’t stock up until you know that you enjoy it!

Aldi is all about meat this week! And unfortunately not much else. Aldi is my number one store recommendation for doing Keto on a budget based on their great every day prices on Keto staple items.

Most weeks the Aldi sales flyer has at least 1 Keto vegetable, fruit and meat on sale. And you can build a great meal or meal plan with that. Then some weeks like this one, there isn’t much on sale to use in a meal plan.

When that happens, you have a few options. 

#1. Rely on what is in your freezer or what is left over from last week.
#2. Shop at a different grocery store or farmer’s market that has produce or Keto fruits on sale. I love doing a one stop shop at Aldi, but when that’s not possible, make a few extra stops
#3. Buy from the selection of Aldi’s regular priced stuff. Aldi’s produce and frozen veggies have pretty reasonable prices. So if nothing is on sale and you can’t do option 1 or 2, pick up a few regular priced items just to get you through the week. Think salads, broccoli, frozen veggies. The price will be fairly low and you’ll survive a few weeks this way-especially since you are a frugal shopper!

The real trick to saving money on Keto is to use what’s on sale over and over throughout the week in different meals.

That way you save money, because you bought what was on sale and you don’t get bored, because you are just re-purposing those sale items at each meal into something tasty that you enjoy.

This easy Keto cucumber salad will be a big hit with Keto and non-ketoers alike! Ask me how I know? I’ve been making this salad for the last year or so and feeding it to everyone. And I’ve had nothing but rave reviews. 

I make this on weeknights as a quick and easy dinner side. My boyfriend who does not do the Keto diet loves it and requests it often. 

I’ve made this for my sister who does follow the Keto diet. Since she is busy, I often prep her meals for her. If you’re interested in seeing the Keto meal prep and what I make, you can check it out here or here

Most recently this Keto cucumber salad came with me to a barbecue (along with my Keto KFC copycat coleslaw) and was enjoyed my an entire group of non Keto eaters as well as my low carb diabetic grandfather. They all loved the combination of fresh dill and feta in this salad. I doubled the recipe since it was a large group and there was hardly any leftovers!

Cucumbers are a perfect Keto vegetable!

Cucumbers are low in carbs, have a reasonable amount of fiber and a very mild flavor. So they make a perfect base for this Keto creamy cucumber salad

For this recipe I chose to use English cucumbers because they have a firmer texture when sliced and less seeds (some are even seedless). You can use a regular cucumber, but the salad will be a bit more watery and soggy. Don’t get me wrong-it will still be delicious, just a different consistency. 

I also leave the skins on when I eat cucumbers-more fiber! And it helps hold the cucumber and whatever you are making with it together. If you hate the skins, you can peel the cucumbers-just personal preference!

Make Keto Cucmber Salad!

All of the ingredients in this low in carb cucumber feta dill salad concoction are inexpensive and easy to find. Which is great especially if you want to save money and do the Keto diet on a budget.

I have (and love) Keto “treat” recipes that use fancier ingredients. But for my daily eats, I tend to keep things simple and inexpensive. You should be able to get all of the ingredients for this recipe from Aldi or you favorite grocery store. 

The only ingredient that might not be at Aldi or your local store is the greek seasoning. The one I use is from Penzey’s . You can also find greek seasoning on Amazon (this one here should be perfect). 

If all else fails, you can substitute extra salt and pepper-just a few shakes should do the trick. And 1/2 tsp of garlic powder, 1/2 tsp onion powder, 1/4 tsp oregano, 1/4 tsp basil, 1/4 tsp parsley, 1/4 tsp of marjoram (skip if this isn’t in your spice cupboard already).

Keto Cucumber Salad

Keto cucumber salad is a quick and easy summer side dish that everyone will love. This Keto recipe mixes crispy cucumbers smothered in cool sour cream, with salty feta cheese, greek seasoning and is topped off with freshly chopped dill. Your tastebuds will thank you-whip this up today!

Prep Time 15 minutes
Servings 4

Ingredients

  • 20 oz English cucumber (about 2 cucumbers)
  • 1/2 cup Sour Cream
  • 4 oz Feta cheese crumbles
  • .5 oz Fresh chopped dill
  • 2 tea Greek seasoning
  • salt and pepper to taste

Instructions

  1. Chop English cucumber into bite sized pieces

  2. The next few steps are to remove water from the cucumbers and make the salad less soupy. You can skip this if you are in a rush or don't mind a more watery dressing. 

    Place chopped cucumber in a mixing bowl and sprinkle liberally with salt. This helps draw the moisture out of the cucumber. 

  3. Line a colander or strainer with paper towels. 

    Add the sliced cucumber on top

    Place strainer over a mixing bowl to catch any water coming off the cucumbers

  4. Let the cucumbers sit on the counter or in the fridge for 20 minutes to 4 hours (depending on how long you want to wait). The longer they sit, the more moisture they lose. 

  5. Empty any water from the mixing bowl. Wipe dry with a kitchen or paper towel.

  6. Dump cucumbers in the mixing bowl. 

  7. Add greek seasoning and salt and pepper to taste and mix well, so the spices evenly distribute over all of the cucumbers

  8. Add sour cream and feta cheese. Mix well

  9. Add chopped fresh dill. You can sub in dried dill if that is all you have. I like to add this as garnish on the top, but you can also mix this in, so the dill flavor mingles throughout the salad. 

  10. Severe immediately or refrigerate until it's time to eat!

I bet you’re wondering how the heck I decided to make Keto chocolate covered strawberry popsicles?!?! Well, let me tell you, this was not the first recipe I attempted or the first one I wanted to share, but it was the first one that worked and tasted amazing. 

If you’re a part of my Facebook group, you know I’m always searching Amazon (and the rest of the internet) for the very best Keto deals and sales to post in the group so we can all save money. So, while I was searching one day, I found an Amazon lightening deal on popsicle molds (making them super cheap) and I snatched them up with thoughts of all the summer popsicles I could make.

I was thinking I could just take a yummy Keto beverage, pour it into a popsicle mold and BAM! I would have a perfect Keto popsicle. Turns out, that method can make rock hard, not so yummy Keto popsicles that separate when frozen. And that is definitely not what anyone wants.

So I kept experimenting, and the Keto chocolate covered strawberry popsicle was born. This Keto recipe mixes real strawberries, cream, cream cheese, stevia, and chocolate collagen. The end result is a creamy, frosty, slightly sweet Keto popsicle that tastes like a chocolate covered strawberry! 

Quick Keto Popsicles!

These Keto popsicles are super quick to whip up. I’m talking like 5 minutes of prep. All of the ingredients go into a blender and then straight to the freezer-easy as that! Plus there are only 2 net carbs per popsicle, so you can enjoy without guilt. 

I used Philadelphia cream cheese in this recipe because it has a lower carb count. Although, it cost me a little bit more, it has half of the carbohydrates as the cream cheese I normally get at Aldi and keeps the carb count in this recipe low. 

I also used Perfect Keto chocolate collagen for the chocolate flavor in this recipe. I first tried using a chocolate protein powder and that just made these gloopy and chunky. The collagen is much lighter and smoother (and it’s sweetened with stevia, so it tastes really good) so it mixes well in this recipe. Plus you get all the added benefits of collagen-like stronger hair and nails, smoother and more elastic skin, so that’s a bonus! 

How much do the Keto popsicles cost to make?

The entire recipe makes 6 Keto popsicles and cost me $4.08 to make. Here is the cost breakdown: 

  1. Strawberries=$0.30 I bought a full pound of strawberries at Aldi for $1.19 
  2. Heavy Cream=$0.49. I bought cream at Aldi for $1.99/2 cups.
  3. Cream Cheese=$0.54. I bought a family pack at Wegman’s. 16oz for $4.29.
  4. Stevia=$0.02. I bought a 2oz container on Amazon for $6.79 (Amazon can change prices at any time, this is what it cost me several months ago).

Keto Chocolate Covered Strawberry Popsicles

Keto chocolate covered strawberry popsicles are an easy summer dessert that you can whip up in less than 5 minutes and pop in the freezer to have on hand for a quick Keto treat! At 2 net carbs per Keto popsicle, you can have all the flavor of a chocolate covered strawberry in frozen guilt free form. Make these today!

Ingredients

  • 4 oz strawberries (without stem)
  • 1/2 cup heavy cream
  • 2 oz cream cheese (I use Philadelphia for a lower carb count)
  • 1/2 cup water
  • 2-3 scoops chocolate collagen from Perfect Keto
  • 6 drops of liquid stevia (use more if you want a sweeter popsicle)

Instructions

  1. Put all ingredients in a blender. Blend well until all ingredients are fully combined

  2. Taste test the mixture. Add additional stevia drops if you need/want a sweeter popsicle

  3. Pour into popsicle molds 

  4. Freeze until firm. This took me about 4 hours, but your times may vary

Keto Potato Salad

Before I tell you all the details on this Keto Potato Salad, I have a confession. This will be a bit shocking escpecially if you’re a part of the Keto and low carb community.

I am not a fan of cauliflower. I especially DO NOT enjoy cauliflower as a potato substitute.

Sure, I’ll eat cauliflower steamed with cheese sauce or baked in the oven with and garlic. But cauliflower potato salad-I’ll pass. I just don’t like how it tastes.

Keto Potato Salad

This easy Keto potato salad is a creamy, tangy, slightly crunchy recreation of classic potato salad and guess what? It doesn't use any potatoes (or cauliflower). The secret ingredient gives this Keto potato salad an authentic taste and makes you feel like you're eating the real thing. Try it today!

Ingredients

  • 12 oz peeled and chopped Jicama
  • 1/2 cup Mayonnaise
  • 2 tsp Dried minced onion You can substitute fresh onion
  • 1 tsp Celery seed optional but highly recommended
  • 4 Hard boiled eggs
  • 1 tbsp Apple cider vingear
  • 1 tbsp Yellow mustard
  • 1/2 cup diced celery
  • salt and pepper to taste

Instructions

  1. 1. Prepare hard boiled eggs. I always use my InstantPot, but feel free to use your favorite cooking method!

    2. In a large pot, bring 6-8 quarts of salted water to a boil

    3. While your water is boiling peel and dice the jicama into small chunks. Try to keep the chunks similar sizes-they will cook more evenly and give the Keto potato salad a better texture

    5. Once the water is boiling, add your jicama and cook on high uncovered until the jicama is fork tender (like a potato). This took me about 30 minutes, but cook time can vary based on the size of the chunks.

    6. While the jicama is boiling, chop your celery and hard boiled eggs

    7. After the jicama is fork tender, drain.

    8. Let the drained jicama cool for about 10 min. Mixing the salad while the jicama is still warm allows the flavors to combine well together, but you can always cool completely and mix later (or the next day). 

    10. Put jicama in a bowl. Add all the remaining ingredients and mix well. Cover and refrigerate. This tastes best the next day, so my suggestion is to make a day ahead of time!

So now you can re-create taco in a bag or walking tacos that are perfect for the Keto diet! And in case I didn’t mention it, the Quest tortilla style chips are only 4 net carbs per bag!

Why should you make Keto Taco in a bag?

Well, it’s easy and amazingly delicious. Think about the crunch of Keto friendly Dorito like chips, crisp fresh lettuce, your favorite taco meat with just the right amount of spice, cool sour cream and fatty black olives. It’s so fun!

This is also the perfect recipe for a birthday party, family get together, taco Tuesday. The ingredients are simple and probably stuff you already have around the house. And there is no clean up-since you’re eating right out of the bag. 

What do you need to make Keto Taco in a bag?

The only real “required” ingredient is the chips. I ordered mine from Amazon, but you may be able to find them at a local health food store or on the Quest Nutrition website.  Other than that, this “recipe” is completely customizable. If you have leftover taco meat, you can use that. Picked up a rotisserie chicken-use that.

My favorite way to enjoy Keto Taco in a Bag is with ground beef with taco spices, shredded iceberg, cheddar cheese, sour cream and a dash of salsa. You could also add onions, tomato, olives or your any taco topping. Remember most of these toppings have carbs, so make sure you don’t go overboard and you stick to your limit or macro goal.

  • 6 bags Quest Tortilla Style Chips
  • 1 pound of your favorite taco meat cooked and spiced
  • 1/2-1 cup shredded cheddar depending on how cheesy you like your tacos
  • 6 oz shredded iceberg lettuce
  • 6 tbsp sour cream
  • 6 tbsp salsa
  • 6 tbsp sliced black olives optional
  • 6 tbsp diced tomato optional
  • 6 tbsp diced onion or green onion optional
  • to taste green chiles optional

Instructions

  1. 1. Prepare taco meat-you can use beef, chicken, pork sausage-with you favorite blend of seasonings. You can also use leftover or meal prepped taco meat to save time. 

    2. Lightly crush (optional) and open the bags of chips

    3. Divide and scoop the meat into the bag

    4. Add toppings! All of the toppings are optional, but must haves for me are meat, cheese, lettuce, sour cream and salsa

    5. Stick a fork in it and enjoy Keto Taco in a Bag

True confession, I actually love KFC coleslaw. Call me crazy, but there is something about those teeny tiny cabbage bits smothered in creamy sweet goodness, you can’t beat it. But the KFC version is filled with sugar and god knows what else, so the Keto KFC copycat Coleslaw was born. To help fill that KFC craving and stay Keto!

The 2 "secrets" that make this recipe work

When I’ve tried to replicate this recipe in the past pre-keto, it never really worked for me. There were two critical elements I was missing. 

  1. Celery Seed. I don’t know what it is about celery seed, but it adds just a hint of earthy, spicy flavor to the coleslaw that makes it just right. It tastes even better after you let the coleslaw sit overnight. Pick some up at your local grocery store or order some here. You can make the recipe without it, but trust me, it makes a world of differenec
  2. Size of the cabbage or coleslaw mix. Ever noticed how small the cabbage and carrots are chopped in KFC coleslaw? Well, there is a reason-it maximizes the flavor! The small pieces allow the coleslaw dressing to cover more surface area and seep into the cabbage. Plus, since this is a copycat recipe, I want to get as close to original as possible-including the mouth feel of the tiny pieces. I use my food processor for this-it works great and saves time. If you don’t have a food processor, you can either keep the bagged coleslaw as is or chop finely with a knife.

Keto KFC copycat Coleslaw

Keto KFC copycat Coleslaw is a quick, easy and delicious side dish you can make over and over again. It's so good, even non Keto-ers will love it! Make it for dinner, take it to a cookout, pack it in your lunch.

Servings 5

Ingredients

  • 1 14oz bag coleslaw mix
  • 1 ounce diced onion
  • 50 grams mayonnaise
  • 50 grams sour cream
  • 2 tsp celery seed (optional, but highly recommended)
  • 1 tsp garlic powder
  • 2 tbsp vingear
  • 1 tbsp lemon juice
  • 2-4 tbsp erythritol or powdered sweetener of choice
  • salt and pepper to taste

Instructions

  1. 1. Rough chop your onion
    2. Add all ingredients except coleslaw mix to food processor and pulse to combine
    3. Add coleslaw mix to food processor and pulse to combine
    4. Store covered in the fridge. Tastes best when refrigerated overnight
    5. Enjoy!

    If you don't have a food processor: 
    1. Finely chop onion
    2. In a small bowl add all ingredients except coleslaw mix and wisk to combine
    3. Chop coleslaw mix finely for best results then add to a large bowl. You can skip the chopping, but this really tastes best and most like the KFC version when chopped up. 
    4. Pour the wet ingredient mixture over the coleslaw. Stir to combine
    5. Store covered in the fridge. Tastes best when refrigerated overnight
    6. Enjoy!

    This recipe can easily be doubled for a larger group or for meal prep

Keto Meal Prep on a Budget: 10 Keto Meals made for $21.89

If you saw my post last week (Keto Meal Prep on a Budget: 10 Keto Meals for $18.19), you know I’m all about doing the Keto diet on a budget. Planning ahead and even preparing your meals ahead of time can help you save money and stick to your budget. 

I’ll show you how I prepared 10 Keto Meals-including 3 filet mignon and asparagus dinners-for $21.89. Now that’s eating Keto cheap! And delicious.

Should you Keto meal prep and why?

I don’t meal prep for myself, but I do this meal prep for my sister. 

For me, I work from home (for a health insurance company) and can make what I want when I want. I know I’m lucky and working from home is amazing and fits my lifestyle really well. Instead of making my meals ahead of time, I keep my freezer well stocked with meat, fresh produce in the fridge and my pantry full of Keto staples. Then I make each of my meals fresh when I feel hungry and I can make what I’m in the mood for.

But, it takes a lot more time, energy and dirty dishes! And I have found myself in situations where I’m hungry and not prepared. 

So, my recommendation is YES you should meal prep if you can.

You will save money! By preparing your Keto meals (even if you only did lunches), you have a plan in place, set ingredients to shop for and a way to use them. No wasted groceries. Plus no emergency take out meals, because you forgot to by ingredients or defrost the meal or whatever. 

Save time! I batch cook these meals all on the same day, so I am cooking multiple meals at the same time and it’s way faster than cooking each separately. Plus, you won’t be scrambling cooking dinner or preparing lunch the day of. Grab it and go!

Portion, calorie and macro control! If you have made your meals ahead of time, you have your portions set to go, so there is less of a chance of over-eating, exceeding your set calories or carb count for the day. So if your goal with the keto diet is weight loss, this is a huge win, if you can keep your carbs and calories within set limits, you’ll lose weight faster!

What did I make? What did it cost?

This week, I made 3 different types of Keto meals. The total cost for all 10 was $21.89. This includes 3 filet mignon dinners! I stopped at Save-a-Lot to pick up some weekly groceries and found bacon wrapped jalapeno filet mignon on sale for $2.99/10 oz! I couldn’t pass that deal up, so I bought all 5 packages and included some in this meal prep and served the rest for dinner at my house.  

1. Chicken Alfredo over Carrot Noodles (7.5 net carbs). This week my sister requested another round of Chicken Alfredo. I’ve been making it with zucchini noodles, but sometimes those “zoodles” get so soggy, especially when reheating, so I switched to carrot noodles and they are delicious. I used Ragu alfredo sauce (check it out here), pan seared chicken breast, and carrot noodles. Super simple and yummy!

Here is what I used:
$1.24 for 20oz chicken. I bought this chicken from Zaycon for $0.99/pound when it was on sale (check it out here)
$1.79 for Ragu alfredo sauce from PriceRite
$0.48 for 12oz of carrots from Save=a=Lot
$0.11 for 1TBSP coconut oil. Purchased from Aldi for $3.49/jar
$0.20 for spices. This is an estimated cost, I usually get spices from Aldi or on sale from Penzy’s
$0.50 for Parmesan cheese. Purchased from PriceRite

2. Bacon wrapped filet mignon (4 net carbs). I cooked the filets in my sous vide (check it out here) and seared them in the cast iron skillet. And I pan fried the asparagus with BUTTER!.

But if you’ve been stocking up on sales from previous weeks, now is the time to dig into your freezer and use what you’ve got. Keto Meal Prep on a Budget: 10 Meals for $18.19

Doing the Keto diet on a budget is possible! You can make delicious low-carb, high fat meals that don’t cost an arm and a leg. I’m going to show you what I was able to meal prep 10 Keto meals for $18.19!

I love cooking, shopping for deals and coming up with creative meal ideas. My sister on the other hand does not. So when she decided to start the Keto diet, I offered to prep her meals for her to help her stay on track (and save money). Each week I make 10-12 lunch/dinner meals for her and she makes herself bulletproof coffee for her breakfast in the am (check out my 3 recipes for bulletproof coffee here).

We both do “lazy Keto”, so we are only tracking our net carbs and stay under 20 each day. Because we need to stay under that limit, I try to keep each of the meals I make for her at 8 net carbs or less. This leaves room for an occasional Keto treat (like a Quest cookie-check it out here), a fat bomb or extra veggies.

What does the process look like?

1. What are you in the mood for? Since I’m prepping for my sister, I ask her if there are any meals she is really in the mood for or that she really doesn’t want that week. You could do the same. Is there anything you are craving? Any new recipes you want to try? Anything you absolutely don’t want to eat this week? This will give you a great place to start for the next few steps.

2. I take an inventory of my fridge, freezer and pantry. What I do is check for ingredients that need to be used up before they go bad. I look for ingredients that might fit a meal that was requested. And I try to think about using what I have before I start making a shopping list and checking the sales ads.

3. I check the ads for my local stores. Aldi, Save-a-Lot, Price Rite and Target. I look to see what’s on sale, what I should stock up on. Since I love a good deal, this an important and fun step for me! 

4. Plan the meals. After taking inventory of what I have, what’s on sale and any special meal requests, I decide what to make. I do this by searching recipes, Instagram posts and my brain for ideas. I usually pick 3-5 recipes and plan to make a few of each meal making sure that I reach 10-12 meals. I suggest that you calculate the carbs or macros on the meals at this stage, so that you’re really well prepared. I’m terrible at that, so usually end up doing it mid-way through my preparation stage and everything takes longer. So, learn from me, calculate everything now and save time!

5. Make a list and grocery shop. Making a list is crucial, because even if I only need a few things, I always forget something if I don’t have a list and then I end up back at the store or having to go back and change my meal plan-again a time waster.

6. Cook! I prep and cook everything on the same day. This is a time saver, because I can cut and prepare for the next meal while other things are cooking. I store everything in meal prep containers from Amazon (like these ones). If you’re cooking for a family or wanting to store larger quantities, you can use large plastic container (like these) or even gallon size storage bags (like these). Keep the storage simple and easy to access.

What did I make?

This week, I made 4 different meals. Most of which, I made up and didn’t use a recipe, but I will link similar recipes for some of the meals below for you if you need ideas!

1. Chicken Alfredo over Zoodles (7 net carbs). I used Ragu alfredo sauce (check it out here)

2. Crispy Chicken Thighs with Cheesy Brussel Sprouts (7 net carbs). I cooked the chicken thighs in the air fyer, but Keto Connect has a great method I would recommend (check it out here).

3. Double Cheeseburger with Carrot “Fries” (5.5 net carbs). This was simple-I sliced the carrots, tossed with salt and coconut oil and air fried. But you can always use this recipe.

4. Polish Sausage with Sautéed Peppers (6 net carbs). I cooked the sausage and sautéed the red and green peppers with spices and coconut oil.

Cost Breakdown: What did I spend?

1. For Chicken Alfredo over Zoodles, here is what I used:

$1.99 for a pound of brussel sprouts from Aldi
$0.87 for bacon. Purchased entire package for $3.49 from PriceRite
$0.49 for cream purchased from Aldi
$0.25 for mozzarella cheese. Purchased for $0.99/8oz package at PriceRite

3.For the Double Cheeseburger with Carrot “Fries”, here is what I used:
$0.99 for ground beef. Purchased for $1.99/pound from Save-a-Lot. I stocked up and froze a ton of this, since this is an amazing price
$0.31 for 2 slices of provolone cheese. Purchased at Target for $1.89 for 12 slices
$0.19 for carrots. Purchased a 2 pound bag at Price Rite for $1.19
$0.11 for 1TBSP coconut oil
$0.20 for spices. This is an estimated cost

For Polish Sausage with Sautéed Peppers, here is what I used:
