Keto copycat "Reese's" Peanut Butter Trees are a sugar free, low carb and keto friendly version of the original. Keto peanut butter trees taste just like the real thing. Make these to take to a holiday party, to have on Christmas Eve, as stocking stuffer or even a gift for a Keto friend. You will love these!
You can use an immersion blender or standing blender if you don't have a food processor.
Line an 8x11 pan with parchment paper and pour the mixture in. Smooth the mixture into an even layer all across the pan
Refrigerate until the mixture is set (about 1-2 hours). I don't recommend freezing at this stage, it will make the mixture too hard to cut into the tree shape in the next step
Use a christmas tree cookie cutter to cut the peanut butter mixture into as many trees as possible.
Line up the shapes as close as possible and use the space wisely. Don't space them out, or you will end up with a lot of waste
If you have leftover mixture, you can roll them into balls to dip into chocolate or you can reform a small square and continue cutting trees until you have used all of the peanut butter mixture
Place the tree cut outs in the freezer for about a half hour. You can skip this step, but it might cause the trees to melt as you dip into the warm chocolate
I like to use a double boiler. You can melt in the microwave, but be careful not to burn it. Note: Adding the butter or oil is important, because if you only use the chocolate chips, the mixture will be too thick to dip the trees into.
Let the chocolate sit for about 5-10 mins after it is heated. You don't want to put the trees in while it is too hot, they start to melt. Remember you can always reheat if the chocolate becomes solid
Cover the Keto peanut butter trees with melted chocolate
The easiest method is to use a fork, stick it in the side of the tree, dip one side in the chocolate, flip it over and dip the other side. Use a spoon or rubber spatula to cover any bare spots. Lift the tree out of the chocolate with a fork.
Place the covered Keto peanut butter tree on wax or parchment paper to dry. Once the chocolate is set, you can transfer these to the refrigerator.
These can be stored at room temperature, but I suggest storing in the fridge or freezer.
