Budget Friendly Low Carb Egg Roll in a Bowl

But I’m not sure I’m loving that, so let’s stick with budget friendly Egg Roll in a Bowl…

I bring this up because the first time I ever saw a recipe similar to this was on Instagram and it was called Crackslaw. I just couldn’t wrap my head around the name or really the concept of how that could taste good at all. I wasn’t Keto at the time, so I think I just didn’t understand how delicious fried up ground meat with cabbage and veggies could be. But then I tried it. And it was GOOD. Then I made it again and it was REALLY good. Then I made it for my sister and she loved it. And then I had to try and put it into a recipe to share with all of you.

Customize Budget Friendly Low Carb Egg Roll in a Bowl

Every time I make this at home, it’s different. I use whatever spices I’m in the mood for and whatever meat was one sale or was handy in my freezer. So, if you’re looking at this ingredients and something doesn’t look good to you, swap it out!

Don’t like spicy sausage? Try regular or “sweet” sausage.

Not a fan of ginger? Leave it out. Or, leave it out and sub in more garlic!

Forget to buy sesame seeds? Skip it.

Ran out of rice vinegar? Substitute apple cider vinegar or plain white.

Was ground beef on sale this week? Use it. You could try all beef. Or half spicy sausage and half beef.

I think you get the idea. Use what you have, what you like and what is on sale.

Budget Friendly Egg Roll in a Bowl

Ingredients

  • 1 1/4 pound spicy ground pork (or beef)
  • 1/4 cup water
  • 3 cups shredded green cabbage
  • 1 medium shredded carrot
  • option, can substitute a bag of coleslaw mix for the cabbage/carrot
  • 2 TBSP toasted sesame oil
  • 1/2 TBSP minced ginger
  • 2 TBSP chopped green onion
  • 1 TBSP rice vinegar
  • 2 TBSP coconut aminos (or soy sauce)
  • 1 TBSP toasted sesame seeds (optional)
  • salt and pepper to taste

Instructions

  1. Heat a large high-sided skillet over medium-high heat. Add sausage and cook, breaking the meat into small pieces as it cooks, for approximately 5-6 minutes. Once sausage is no longer pink, remove from heat and carefully drain excess grease from pan.

    Safety Tip: Wipe off any excess fat that drips down the side of the pan before returning to burner.

  2. Return skillet to heat. Add water and scrape up brown bits from the bottom of the pan with a spatula. Reduce heat to medium and add shredded cabbage, carrots, sesame oil, ginger, and green onions. Season with salt and black pepper, to taste, and cook, stirring frequently, until the cabbage wilts and the carrot softens, approximately 4-5 minutes. 

  3. Add rice vinegar and coconut aminos and stir to combine.Cook another 1-2 minutes or until heated through. Remove from heat and transfer to a serving platter or bowl. Sprinkle with toasted sesame seeds, if using,and serve immediately. Enjoy!
