I bet you’re wondering how the heck I decided to make Keto chocolate covered strawberry popsicles?!?! Well, let me tell you, this was not the first recipe I attempted or the first one I wanted to share, but it was the first one that worked and tasted amazing.
You know I’m always searching Amazon (and the rest of the internet) for the very best Keto deals and sales to post in the group so we can all save money. So, while I was searching one day, I found an Amazon lightening deal on popsicle molds (making them super cheap) and I snatched them up with thoughts of all the summer popsicles I could make.
I was thinking I could just take a yummy Keto beverage, pour it into a popsicle mold and BAM! I would have a perfect Keto popsicle. Turns out, that method can make rock hard, not so yummy Keto popsicles that separate when frozen. And that is definitely not what anyone wants.
So I kept experimenting, and the Keto chocolate covered strawberry popsicle was born. This Keto recipe mixes real strawberries, cream, cream cheese, stevia, and chocolate collagen. The end result is a creamy, frosty, slightly sweet Keto popsicle that tastes like a chocolate covered strawberry!
Quick Keto Popsicles
These Keto popsicles are super quick to whip up. I’m talking like 5 minutes of prep. All of the ingredients go into a blender and then straight to the freezer-easy as that! Plus there are only 2 net carbs per popsicle, so you can enjoy without guilt.
I used Philadelphia cream cheese in this recipe because it has a lower carb count. Although, it cost me a little bit more, it has half of the carbohydrates as the cream cheese I normally get at Aldi and keeps the carb count in this recipe low.
I also used Perfect Keto chocolate collagen for the chocolate flavor in this recipe. I first tried using a chocolate protein powder and that just made these gloopy and chunky. The collagen is much lighter and smoother (and it’s sweetened with stevia, so it tastes really good) so it mixes well in this recipe. Plus you get all the added benefits of collagen-like stronger hair and nails, smoother and more elastic skin, so that’s a bonus!
Can you have popsicles on Keto?
Absolutely, you can have popsicles on Keto!
If you’re opting for store bought popsicles make sure that you’re checking the nutrition information for hidden sugar and carbs. You also want to check the ingredients to make sure the ingredients in the popsicles fit your style of Keto.
But, in my opinion, you are way better off making your own homemade Keto popsicles, which is why i created this recipe.
What do I need to make Keto Chocolate Covered Strawberry Popsicles?
Great question right?!
You probably have some of the ingredients at home already or have easy access at the grocery store. The one piece of “equipment” you might not have is the popsicle molds. So, you want to make sure you plan ahead and pick these up at a store or order them online-I got mine from Amazon and they came within 2 days (Yay for Prime).
The other thing you need is a blender. I use a Vitamix-I bought mine used about 11 years ago and it was worth every penny! You can use whatever blender or food processor you have, just make sure that all of the ingredients are fully incorporated before you pour them into the popsicle molds.
The other ingredient you may not have on hand is liquid Stevia. You can use any calorie free liquid sweetener that you like, but you will have to adjust the recipe for your tastes. I prefer to use the liquid Stevia because it only takes a few drops to sweeten these popsicles (or anything really).
Ingredients
- 4 oz strawberries (without the stem)
- 1/2 cup heavy cream
- 2 oz cream cheese (I use Philadelphia brand because it has a very low carb count)
- 1/2 cup water
- 2-3 scoops of chocolate collagen
- 6 drops of liquid Stevia-add more if you like a sweeter Keto Popsicle
Step by Step Instructions
Step 1
Put all ingredients in the blender and blend until well incorporated and you have a thick mixture
Step 2
Taste test the mixture. Add additional Stevia if you want a sweeter Keto popsicle.
Step 3
Pour into popsicle molds
Step 4
Freeze until solid-this can be between 2-4 hours
