Keto Cucumber Salad

Keto cucumber salad is a quick and easy summer side dish that everyone will love. This Keto recipe mixes crispy cucumbers smothered in cool sour cream, with salty feta cheese, greek seasoning and is topped off with freshly chopped dill. Your tastebuds will thank you-whip this up today!

Ingredients

  • 20 oz English cucumber (about 2 cucumbers)
  • 1/2 cup Sour Cream
  • 4 oz Feta cheese crumbles
  • .5 oz Fresh chopped dill
  • 2 tea Greek seasoning
  • salt and pepper to taste

Instructions

  1. Chop English cucumber into bite sized pieces

  2. The next few steps are to remove water from the cucumbers and make the salad less soupy. You can skip this if you are in a rush or don't mind a more watery dressing. 

    Place chopped cucumber in a mixing bowl and sprinkle liberally with salt. This helps draw the moisture out of the cucumber. 

  3. Line a colander or strainer with paper towels. 

    Add the sliced cucumber on top

    Place strainer over a mixing bowl to catch any water coming off the cucumbers

  4. Let the cucumbers sit on the counter or in the fridge for 20 minutes to 4 hours (depending on how long you want to wait). The longer they sit, the more moisture they lose. 

  5. Empty any water from the mixing bowl. Wipe dry with a kitchen or paper towel.

  6. Dump cucumbers in the mixing bowl. 

  7. Add greek seasoning and salt and pepper to taste and mix well, so the spices evenly distribute over all of the cucumbers

  8. Add sour cream and feta cheese. Mix well

  9. Add chopped fresh dill. You can sub in dried dill if that is all you have. I like to add this as garnish on the top, but you can also mix this in, so the dill flavor mingles throughout the salad. 

  10. Severe immediately or refrigerate until it's time to eat!
